Baking


So this afternoon we decided to back some goodies!
We went for banana muffins and raisin and coconut flapjack.

Livvy loves helping me in the kitchen and she is always really keen to get stuck in. 
I forgot to take photos of her helping because it was such a spur of the moment desicion. 
I do have a couple of photos of the end results though that I will put at the bottom. 
She really likes both of these and they are so quick and easy to make and its nice knowing your toddler is eating something fresh and healthy that you have made for them. Its much cheaper than buying ready made from the supermarket too.
Here is the recipes for both in case you want to try them out.

Banana Muffins

Ingredients

1 Medium Egg

1/2 TSP Vanilla Extract
55G Soft Light Brown Sugar
1 Large Ripe Banana Mashed Up
55ml Oil
85G Plain Flour
1/2 TSP Baking Powder
1/2 TSP Bicarbonate Soda

Method

Preheat oven to 180c/160c fan. Line 2 mini muffin tins with mini muffin liners.

Beat the eggs and sugar together until thick, stir in the banana and oil.

Sift on the flour, baking powder, bicarbonate of soda, then add the vanilla extract to the bowl.

Stir together until just combined.

Spoon into muffin cases (around 2/3 full) and bake 12-14 minutes, until risen and firm to the touch. Remove and cool.

Store in an airtight box for up to 3 days or freeze (defrost at room temp approx 1 hour).



Raisin and Coconut Flapjacks

Ingredients

85g butter
90g brown sugar
55g golden syrup
100g rolled oats
40g desiccated coconut
30g raisins

Method

Preheat the oven to 170°C/325°F 

Line a 20cm square tin with baking parchment, with the parchment coming up the sides.

Put the butter, sugar and golden syrup in a large saucepan.

Heat gently, stirring occasionally, until the butter and sugar have melted.

Remove from the heat and mix in the remaining ingredients.

Spoon into the prepared tin and press out in an even layer.

Bake for 25 minutes or until golden around the edges.

Cool completely, then lift out of the tin and cut into 12 small bars.
